The Story Behind This Coffee
This specific lot was delivered by 125 smallholder producers during peak season of the harvest.
The level of care that Musasa Dukunde Kawa Ruli takes over the processing is impressive. Cherries are hand-picked only when fully ripe and then pulped that same evening using a mechanical pulper that divides the beans into three grades by weight. A layer of mucilage is left on the beans, and they are spread on raised beds, no thicker than 3cm, to initiate the drying process. The beans remain here, covered and undisturbed for three days, to begin a caramelization of the mucilage. The beans become dark in hue, and are manually separated to prevent over-fermentation. Drying then ensues for 25 – 30 days, once it reaches an 11% moisture reading. The coffee is then stored in parchment in Mbilima’s purposebuilt warehouse prior to final dry-milling and hand-sorting at the Cooperative’s brand-new dry mill in Kigali. Each coffee that arrives is also cupped by Musasa’s team of expert cuppers along with the Q-graders of their exporting partner, Rwashocco.
